Equipment

  • Immersion or hand blender

Ingredients

  • 1 pound (500 grams) fresh or frozen strawberries
  • 1/3 cup (75 ml) water
  • 2 tbsp grass-fed gelatin powder
  • 1 tbsp honey optional

Instructions

  • Place strawberries and about half of the water in a medium-sized pot and let simmer for about 5 minutes. In the meantime, add gelatin powder to the remaining water and set it apart.
  • Pour some of the hot strawberry liquid into a beaker or mason jar, add the gelatin and blend with an immersion or hand blender until all the gelatin is dissolved. Add remaining strawberries with their liquid and honey and puree until smooth.
  • Pour the mixture into a container and refrigerate for at least 2 hours, or until the gelatin is set.
  • Slice the gelatin into portions, or have fun cutting it out with shapes! You can also use single portion molds for the gelatin.

Notes

Honey gives this strawberry gelatin a little hint of additional sweetness, but you can skip it if you want to make it even more low-sugar.
