Pear and ginger natural gelatin

Equipment

  • 1 immersion blender or food processor

Ingredients

  • 5 or 6 ripe pears
  • 1 teaspoon fresh ginger grated
  • 1 tablespoon honey optional
  • 1 1/2 tablespoons grass-fed gelatin
  • 2/3 cup water

Instructions

  • Peel and core the pears and cut them into medium size pieces.
  • Grate the fresh ginger using a grater or zester. Place cubed pears, 1 teaspoon of grated ginger, 1 tablespoon of honey, and 1/3 cup of water in a medium stainless steel saucepan and cook over medium heat for about 10 minutes, or until the pears are soft.
  • In the meantime, stir the remaining 1/3 cup of water in with the 1 1/2 tablespoons of gelatin and set aside.
  • Once the pears are cooked, transfer them into a jar or food processor, add the hydrated gelatin and blend until the gelatin is dissolved completely and the mixture is smooth.
  • Pour the mixture into a container. Let it cool and then transfer in the refrigerator until the gelatin is set (at least 2 hours).
  • Slice the gelatin into portions, or have fun cutting it out with shapes! You can also use single portion molds for the gelatin.

Notes

The honey in this recipe is optional but adds a hint of extra sweetness that balances the pungent notes of the ginger out. 
Use ripe pears in this recipe for optimal flavor and texture and to increase digestibility.
