Healthy Spiced Christmas Jello with Beef Gelatin

Equipment

  • immersion blender or food processor
  • 8 x 8 inch dish or silicone molds or cups

Ingredients
  

  • 1 lb strawberries fresh or frozen
  • ½ lb cranberries fresh or frozen
  • ½ cup orange juice
  • ½ cup honey preferably raw
  • 2½ or 4 tbsp beef gelatin see notes
  • ½ cup water for blooming gelatin
  • 1 tsp fresh ginger grated or ½ tsp dry ginger
  • 1 tsp cinnamon
  • ¼ tsp allspice

Instructions
 

  • In a large pot, combine strawberries, cranberries, cinnamon, grated ginger, allspice, and orange juice. Bring to a gentle simmer and cook over low heat for about 20 minutes, until the fruit softens and the cranberries begin to burst.
  • Meanwhile, bloom gelatin in ½ cup of water. Set aside.
  • Once the fruit is ready, stir in honey, then add the bloomed gelatin, mixing until fully dissolved.
  • Use an immersion blender (or transfer to a food processor) and blend until smooth. For an extra silky texture, you can pass the mixture through a food mill before adding the honey and gelatin.
  • Pour the warm mixture into an 8 × 8-inch dish, or use silicone molds or small cups. Refrigerate for at least 4 hours, or until fully set.
  • Once firm, cut into squares or fun shapes using cookie cutters, or simply scoop and serve.

Notes

Use 4 tablespoons gelatin for a very firm jello you can cut into cubes or shapes.
Use 2½ tablespoons gelatin for a soft, spoonable jello.
Store in a covered container in the refrigerator for up to 7–10 days.
