Coconut Flour Brownies (Gluten-free, Grain-free)

These simple coconut flour brownies are the perfect healthy treat. Gluten-free and all-natural, these brownies are delicious, simple, and full of nutritious ingredients. A special guilt-free dessert for every occasion!

Ingredients
  

  • 5 large eggs
  • 1/2 cup 115 grams grass-fed unsalted butter, melted
  • 1/4 cup 30 grams coconut flour
  • 1/2 cup coconut sugar
  • 1/3 cup cocoa powder
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 scoop grass-fed collagen optional
  • 1/2 cup chocolate chips or chunks optional

Instructions
 

  • Preheat your oven to 375°F (190°C). Place the butter in a 9 x 9 inch dish and put it in the oven while preheating until the butter is melted.
  • In a large bowl, combine eggs, vanilla and coconut sugar and whisk well until smooth and airy using a hand electric mixer or whisk.
  • Once the butter is melted, add it to the egg and sugar mixture and whisk well until smooth.
  • Combine all the dry ingredients in a separate bowl, then add them into the eggs, sugar, and butter mixture and mix carefully just until incorporated. Don't overmix.
  • Fold in the chocolate chips (optional).
  • Add the batter into a greased or parchment-lined 9x9 dish and bake in the preheated oven for about 20-25 minutes, or until the top is cranky and the sides start to separate.
  • Remove the pan from the oven and let it cool off completely on a cooling rack.
  • Cut into 9 brownies and serve, or store in the refrigerator and enjoy later!

Notes

Grass-fed collagen is optional for this recipe. Add for protein boost and skin and joints benefit!
The chocolate chips are also optional, but add extra indulgence. You can fold them in the batter or add them on top of the brownies before baking. You can also skip them, your brownies will still be delicious!
