I’ll tell you a secret. Every day after I put my son down for his nap, I like to take a moment just for myself and indulge in a delicious cup of hot coffee and a little treat before I sit down and do my daily work.
I like to have something not too high in sugar and that gives me some proteins, healthy fats, and nutrients to fuel my brain. These easy and healthy coconut flour brownies are simply my favorite. I usually bake a batch at the beginning of the week, I cut the portions out and store them in the fridge. To be precise, I hide them in the back corner of the fridge behind the veggies, so that no one else will steal my precious treat! Mommy’s little secret 😉
A Brownie Recipe with Healthy Ingredients
Coconut flour
Coconut flour is one of the staples in my pantry. I find it the perfect ingredient for baking when choosing not to use grains. Read more about the benefits of a grain-free diet here.
It has low carbohydrate content, and it’s high in fibers, potassium and manganese. Coconut flour contains medium-chain triglycerides (MCT), which makes it healthier than other nut flours (such as almond) that are rich in omega-6 polyunsaturated fats. Coconut flour is highly absorbent, which means you need to use a limited amount of flour in a recipe, making it very affordable. Coconut sugar
For this grain-free and gluten-free brownie recipe, I used coconut sugar, which is one of my favorite natural sweeteners. Coconut sugar has a taste similar to brown sugar, but with a hint of caramel, and has a lower glycemic index. I personally find that I can use little coconut sugar in my recipes but still achieve a balanced sweet taste, which makes the final product lower in carbs. Chose an organic, non-GMO coconut sugar for your recipes!
Other ingredients
For these brownies I used an organic cocoa powder with no additives like this one. I add grass-fed collagen powder to this recipe for an extra boost of proteins and to promote healthy skin and joints (read more about the benefits of collagen here).
Grass-fed butter added healthy fats and nutrients and extra taste and smoothness to this recipe. You can also substitute butter with coconut oil for a paleo-friendly version.
A simple recipe Everyone Can Make
This recipe is also one of the simplest coconut flour recipes ever! It’s so failproof that you can let your kids help you or even make them all by themselves. My 2 year-old can pretty much do it!
Just make sure you whisk the eggs and sugar together well, then add the butter and whisk very well again. When you add the dry ingredients, just incorporate everything without overmixing. Lumpy is fine for these brownies! They’ll be perfectly fudgy and indulgent.
Wanna know an easy trick for melting your butter? As your oven warms up, add the butter cut into small pieces to the same pan where you’re going to bake the brownies and let it melt in the oven while you gather and measure the other ingredients. This will save you time and you won’t have anything extra to clean, plus the pan will be greased and your brownies won’t stick to it!

Fudgy, Indulgent Brownies without Grains and with low Sugar!

The other reason I LOVE this recipe and keep coming back to it? You’d never guess it’s healthy! These brownies are incredibly fudgy and indulgent, with a deep chocolate flavor and a perfectly balanced sweetness that rivals any traditional brownie.
What they don’t have is grains, or all those extra carbs! This recipe has about one-third less sugar than most conventional brownies (even less if you skip the chocolate chips), and it’s packed with more protein, fiber, and healthy fats. A treat you can feel good about!
Coconut flour brownies ingredients

- 5 large eggs
- 1/2 cup (115 grams) grass-fed unsalted butter, melted
- 1/4 cup (30 grams) coconut flour
- 1/2 cup coconut sugar
- 1/3 cup cocoa powder
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 teaspoon baking powder
- 1 scoop grass-fed collagen (optional)
- 1/2 cup chocolate chips or chunks (optional)
How to make These coconut flour brownies
Step 1: Preheat your oven to 375°F (190°C). Place the butter in a 9 x 9 inch dish and put it in the oven while preheating until the butter is melted.
Step 2: In a large bowl, combine eggs, vanilla and coconut sugar and whisk well until smooth and airy using a hand electric mixer or whisk.
Step 3: Once the butter is melted, add it to the egg and sugar mixture and whisk well until smooth.

Step 4: Combine all the dry ingredients in a separate bowl, then add them into the eggs, sugar, and butter mixture and mix carefully just until incorporated. Don’t overmix.
Step 5: Fold in the chocolate chips (optional).
Step 6: Add the batter into a greased or parchment-lined 9×9 dish and bake in the preheated oven for about 20-25 minutes, or until the top is cranky and the sides start to separate.
Step 7: Remove the pan from the oven and let it cool off completely on a cooling rack.
Step 8: Cut into 9 brownies and serve, or store in the refrigerator and enjoy later!

Notes
Grass-fed collagen is optional for this recipe. Add for protein boost and skin and joints benefit!
The chocolate chips are also optional, but add extra indulgence. You can fold them in the batter or add them on top of the brownies before baking. You can also skip them, your brownies will still be delicious!
