Beef gelatin. The secret ingredient that turns fruit into a firm, nourishing jello. Look for a good quality grass-fed bovine gelatin like Great Lakes Wellness.
Honey. A natural sweetener that adds gentle warmth and complements the spices. Use raw honey for the best benefits.
Orange juice. Adds an extra Christmassy touch that goes so well with the cranberries. Use freshly squeezed or store-bought orange juice.

How to Make This Spiced Christmas Jello with Beef Gelatin
Step 1: In a large pot, combine 1 lb strawberries, ½ lb cranberries, 1 tsp cinnamon, 1 tsp grated ginger, ¼ tsp allspice, and ½ cup orange juice. Bring to a gentle simmer and cook over low heat for about 20 minutes, until the fruit softens and the cranberries begin to burst.

Step 2: Meanwhile, bloom 2½ to 4 tablespoons of gelatin (see Notes) in ½ cup of water. Set aside to soften.

Step 3: Once the fruit is ready, stir in ½ cup honey, then add the bloomed gelatin, mixing until fully dissolved.

Step 4: Use an immersion blender (or transfer to a food processor) and blend until smooth. For an extra silky texture, you can pass the mixture through a food mill before adding the honey and gelatin.

Step 5: Pour the warm mixture into an 8 × 8-inch dish, or use silicone molds or small cups. Refrigerate for at least 4 hours, or until fully set.

Step 6: Once firm, cut into squares or fun shapes using cookie cutters, or simply scoop and serve.

Notes
Use 4 tablespoons gelatin for a very firm jello you can cut into cubes or shapes.
Use 2½ tablespoons gelatin for a soft, spoonable jello.
Store in a covered container in the refrigerator for up to 7–10 days.
