Easy and Healthy Coconut Flour Brownies (Grain-Free, Gluten-Free)

These simple coconut flour brownies are the perfect healthy treat. Grain- and gluten-free and all-natural, these brownies are delicious, simple, and full of nutritious ingredients. A special guilt-free dessert for every occasion!

I’ll tell you a secret. Every day after I put my son down for his nap, I like to take a moment just for myself and indulge in a delicious cup of hot coffee and a little treat before I sit down and do my daily work. I like to have something not too high in sugar and that gives me some proteins, healthy fats, and nutrients to fuel my brain. These easy and healthy coconut flour brownies are simply my favourite. I usually bake a batch at the beginning of the week, I cut the portions out and store them in the fridge. To be precise, I hide them in the back corner of the fridge behind the veggies, so that no one else will steal my precious treat! Little mommy secret 😉

Healthy ingredients

Coconut flour is one of the staples in my pantry. I find it the perfect ingredient for baking when choosing not to use grains. Read more about the benefits of a grain-free diet here.

It has low carbohydrate content, and it’s high in fibres, potassium and manganese. Coconut flour contains medium-chain triglycerides (MCT), which makes it healthier than other nut flours (such as almond) that are rich in omega-6 polyunsaturated fats, an unhealthy option when consumed in excess. In addition, coconut flour is highly absorbent, which means you need to use a limited amount of flour in a recipe. Usually, coconut flour recipes also call for more eggs, which makes them higher in proteins. I love Bob’s Red Mill organic coconut flour for all my recipes!

For this recipe, I used coconut sugar, which is one of my favourite natural sweeteners. Coconut sugar has a taste similar to brown sugar, but with a hint of caramel, and has a lower glycemic index. I personally find that I can use little coconut sugar in my recipes but still achieve a balanced sweet taste, which makes the final product lower in carbs. Chose an organic, non-GMO coconut sugar for your recipes!

I used an organic cocoa powder with no additives like this one. I add grass-fed gelatin or collagen powder to this recipe for an extra boost of proteins and to promote healthy skin and joints (read more about the benefits of collagen here). Grass-fed butter added healthy fats and nutrients and extra taste and smoothness to this recipe. You can also substitute butter with coconut oil for a paleo-friendly version.

Wanna know an easy trick for melting your butter? As your oven warms up, add the butter cut into small pieces to the same pan where you’re going to bake the brownies and let it melt in the oven while you gather and measure the other ingredients. This will save you time and you won’t have anything extra to clean, plus the pan will be greased and your brownies won’t stick to it!

This recipe is just so simple that my 2-year old can pretty much bake it by himself!

I like adding chocolate chips or chocolate chunks on top to make these brownies extra indulgent, but not too much. If you feel like going all in, you can add an extra 1/4 cup to the batter! You can also skip the chocolate altogether if you want to make this recipe even more guilt-free (but still delicious!).

Coconut flour brownies ingredients

  • 3 large eggs
  • 1/3 cup (75 grams) grass-fed unsalted butter, melted
  • 1/4 cup coconut flour
  • 1/3 cup coconut sugar
  • 1/3 cup cocoa powder
  • 1/4 teaspoon salt
  • 1 teaspoon baking powder
  • 1 scoop grass-fed collagen or gelatin (optional)
  • 1/4 cup chocolate chips or chunks (optional)

How to make coconut flour brownies

  1. Preheat your oven to 350 degrees F.
  2. Combine all ingredients in a bowl and whisk until everything is incorporated and the batter is smooth.
  3. Add the batter into a greased or parchment-lined 9×5 loaf pan, spread chocolate chips or chunks on top, and bake for about 20 minutes, or until set.
  4. Cut into 8 brownies and serve warm, or store in the refrigerator and enjoy later!

Instructions

  • Preheat your oven to 350 degrees F.
  • Combine all ingredients in a bowl and whisk until everything is incorporated and the batter is smooth.
  • Add the batter into a greased or parchment-lined 9×5 loaf pan, spread chocolate chips or chunks on top, and bake for about 20 minutes, or until set.
  • Cut into 8 brownies and serve warm, or store in the refrigerator and enjoy later!

Notes

Grass-fed collagen or gelatin is optional for this recipe. Add for protein boost and skin and joints benefit!
For an extra indulgent treat, increase chocolate chips or chunks to 1/2 cup and fold in with the batter. Skip the chocolate if you wish, you’ll brownies will still be delicious!
